Mulligatawny

A peppery, golden lentil soup with a story three centuries long. Red lentils simmered with onion, garlic, ginger, cumin, turmeric and black pepper, finished with a squeeze of lemon. Warming, gently spiced and velvety without any cream. One of the few Indian dishes Americans often know by name, and a genuine comfort in a bowl. Vegetarian.
